It's a common myth. "Fresh" beef in a retail case has usually been sitting for days — losing moisture, oxidizing, and degrading. Our beef will be aged a minimum of 21 days and then frozen. The product is not frozen right after harvesting. i.e. The beef will be carefully wet aged for a minimum of 21 days. The steaks will then be hand cut, individually vacuum packed and subsequently frozen at peak quality, which locks in flavour, juice, and texture.
No. The damage people associate with frozen beef comes from slow freezing in a home freezer or repeated freeze-thaw cycles. We freeze fast and cold immediately after cutting, so ice crystals stay tiny and the muscle structure stays intact. Thaw it slowly in the fridge and it eats like the day it was cut.
The best way: move the cut from freezer to fridge 24–36 hours before you want to cook it (large roasts need 48 hours). In a hurry? No need to seal the steaks prior to submerging in cool/warm water as the vacuum packing is sealed tight. We do not recommend thawing on the counter or in hot water.
Vacuum-sealed beef keeps its quality in a home freezer for 8–12 months. It's still safe well beyond that — quality just slowly declines.
If it was thawed in the fridge and stayed cold, yes — though quality is best on the first thaw. We recommend portioning before cooking so you only thaw what you need.
